Directions:
In a medium bowl, toss chicken pieces with Cajun seasoning, smoked paprika, garlic powder, and onion powder until well-coated.
Heat olive oil in a large deep skillet over medium-high heat. Add seasoned chicken and sear for 6–8 minutes, stirring occasionally, until golden brown and cooked through. Transfer to a plate and set aside.
In the same skillet, melt butter. Add minced garlic and sauté for 30 seconds until fragrant.
Pour in chicken broth, heavy cream, and diced tomatoes with juices. Stir together and bring to a gentle simmer.
Add uncooked linguine directly into the skillet, stirring to submerge. Cover and simmer for 10–12 minutes, stirring occasionally to prevent sticking.
Once pasta is tender and sauce has thickened, stir in mozzarella and Parmesan cheeses until melted and creamy.
Return cooked chicken to skillet and toss to combine. Let everything warm through for 2–3 minutes.
Sprinkle with chopped parsley and red pepper flakes. Serve hot!
